    Fusion Hanan Beef:

    250 gm beef stir fry marinate for at least five minutes in the following:
    1.5 tablespoon light soy sauce.
    1 tablespoon Chinese cooking wine sherry orange or pineapple juice.
    1 teaspoon + Chinese vinegar.
    1 teaspoon + brown sugar.
    ½ teaspoon jerk paste.
    ¼ teaspoon corn flour.

    And ‘some’ of the following:
    1 to 2 tablespoons brown sugar honey or maple syrup.
    1 dessert spoon dark soy sauce.
    1 dessert spoon tamarind paste.
    1 dessert spoon fermented soy bean paste or 1 block of fermented soy bean.
    1 to 2 teaspoons xo sauce.
    1 to 2 teaspoons scrimp sambal paste.
    1 teaspoon zest.
    1 teaspoon black bean paste.
    1 teaspoon scrimp paste.
    ½ teaspoon cumin.
    ½ teaspoon sumac.
    Schwan pepper and pepper to taste.
    A few splashes sesame oil.
    A few splashes liquid smoke.


    In a pan fry the following on low heat until reasonably caramelised:
    2 diced shallots.
    A few splashes sesame oil.

    Turn up the heat and lightly sear the beef, with the following:
    ½ to 3 dried chilli or jerk paste to taste.
    1 to 3 clove smashed garlic.
    1 to 3 slices smashed ginger.


    Serve with the following:

    Rice.

    Stir fried vegetables.

    Balsamic glaze or Chinese vinegar.

    Dark soy sauce.

    Xo sauce.
