    I purposely avoided major capitals, where there is a significant cohort of ethnic Chinese, who may very well choose authentic Chinese over Aussie Chinese.

    ‘Bundaberg’ was an euphemism for everyday Australia, from the burbs to regional towns. Every town has a Chinese cafe or three, serving Aussie Chinese. And they’re not reliant on immigrant Chinese as their customers.
