You are misunderstanding the term "store of value". Store of value doesn't mean permanent store for all time, it means value can be stored or saved when not being used. Fiat currency is a store of value in the same way that fat in the human body is a store of energy. That fat won't last for ever, but when there's excess food you can eat more than you need and your body will store the excess as fat for the time when there's not enough food.
