Curry Paste
Blend or pulse only in the food processor:
2 medium onions or 4 shallots
½ to 3 tablespoons chili flakes or fresh chili to taste
2 to 4 tablespoons curry powder
3 cloves garlic
1 tablespoon lemongrass paste or one piece of lemongrass
1 desert spoon of Korean curry paste
1 to 2 teaspoon shrimp paste
1 teaspoon turmeric
1 teaspoon of miso
½ teaspoon cloves
A splash or two of light soy sauce
A splash or two of sake and mirin
A splash or two of liquid smoke
