Hanan beef
500 gm beef stir fry, sliced to more or less 2 mm thick
Marinate for at least five minutes in the following:
3 tablespoon light soy sauce
2 tablespoon cooking wine sherry orange or pineapple juice
1 tablespoon dark soy sauce
½ teaspoon corn flour
And some of the following:
1 desert spoon brown sugar
1 desert spoon xo sauce
1 desert spoon zest
1 desert spoon black bean paste
1 desert spoon scrimp paste
1 teaspoon sumac
Half dozen splashes liquid smoke
Fry the beef in a very hot wok, with a little sesame oil for ½ to 3 minutes with the following:
1 to 6 dried chilli
1 to 6 clove smashed garlic
1 to 6 slices smashed ginger
Set aside
Separately in a very hot wok, stir fry with a little sesame oil, four small servings of ‘some’ of the following:
Diced or sliced capsicum
Spring onions cut into a few large pieces
Fresh dried or straw mushroom
Diced or sliced celery
Broccoli florets
Cauliflower florets
When cooked add the following:
One or two cups total made with water glaze stock cooking wine and light soy sauce
Corn flour to thicken sauce slightly
Combine beef with vegetables to serve
