Christmas roast beef:
3 kg whole beef tenderloin.
Coat in the following:
8 cloves pressed garlic.
3 tablespoon olive oil.
2 tablespoons pressed rosemary.
1 tablespoon cracked black pepper.
1 tablespoon dried thyme.
1 tablespoon rock salt.
Barbecue in a pan with a little water on the charcoal webber with the lid on until it reaches 55 c.
Serve with gravy made by simmer the following:
½ litre water.
1 carrot.
1 onion.
1 stick of celery.
Then add the following:
½ litre beef stock.
Brandy.
Contents of the pan.
Rendered beef fat.
Soy
Worcestershire.
