Irish Spiced Beef:
Rub 3 kg of beef in the following:
¾ cup pink salt.
⅓ cup brown sugar.
¼ cup chopped onion.
2 tablespoons Irish spice mix.
4 broken bay leaves.
3 teaspoons pepper.
2 teaspoons dried rosemary.
2 teaspoons dried thyme.
1.5 teaspoons ground allspice.
1.5 teaspoons ground cloves
Leave for 3 days in the fridge.
Place in a roasting pan with the following:
1 to 2 sliced onions.
1 to 2 sliced carrots.
1 stick slice celery.
⅓ cup soy.
⅓ cup Worcestershire.
1 cups stout.
1 cup chicken stock.
Roast on the charcoal barbecue including 1 cup of wet wood chips with the lid on until it reaches 55c.
