Molly's is a boutique hotel near the beach in Kovalam. I have not stayed there but have eaten at the restaurant many times. It looks to be a first class place.
The Uday Samudra is a true resort hotel with all the activities. I stayed there several months and it was great. Maybe a bit more expensive than you want but recommended.
There are several places on Kovalam Beach but can't give a critique.
Hotels in Trivandrum are the Horizon, Indrapuri, Residency, and the Muthoot. I have dined at all of them but have not stayed in them. All are convienient to the shopping areas in Trivandrum.
