Years ago I was an enthusiastic home brewer. Then my two boys became adolescents and my lovely collection of proper beer bottles disappeared. The old returnable beer bottles were thick walled and much less likely to explode. Controlling the sugar for the secondary fermentation is always critical though.
The only modification I would suggest to your technique is to cover the brewing vessel with two layers of cling film set at right angles to each other and well secured at the sides. A pinprick in the centre lets gas escape while still blanketing the brew with a protective gas layer. The transparent cover lets you see when fermentation is done without disturbing the brew.
