Nah, disagree. Like many other things, there is a spectrum of difficulty.
A hand mincer gave me many years access to a variety of sausages, salami and chorizo.
Wouldn't start off making a home smoked pastrami, but neither would i go without a fresh batch of breakfast sausages with sage, 20 minutes, including prep and washup.
