That's the go - no preservative. Have been brewing for many years because of hang overs from commercial beer back in the days before naturally brewed, boutique beers were available.
I still prefer to drink home brew but have not recorded how many have been made but it would be in the hundreds.
I don't know about Tassie rain water but I wouldn't dare to make home brew from my rain water tank. Brisbane town supply is perfect because there is little chance of bacteria. So far only one brew has been ruined by an unknown contamination or carelessness.
Without using preservatives but keeping bottled beer away from light it is possible for them to be kept in excess of 12 months. An all time record for me was 18 months. A couple of bottles were left for two years as a very unsuccessful attempt. Horrible!
