I was inspired by a trip to WA and a visit down to Dunsborough. There was a couple of nice brewries down that way. One was called the wicked ale brewery (a good chocolate beer and a good chilli beer) and the other made a delicious dark beer called a raging bull.

Anyway i just use the Coopers stuff from the local coles and just mix it up a little. Been making a few of the Mexican Cerveza. 1kg of brew enhancer plus 1/2kg of dextrose (just tried a 1/2kg of malt) creates a really clear beer with a reasonable head....but its ready to drink after 2-3 weeks after bottling!!

Cilli beer is great...just add some dried chilli or chilli powder when you are mixing it up. When you are drinking it you fall into a trap...."why do i have this hot taste in my mouth? Better have a swig of beer".
