Ozzies are really - about the best in the world by a country mile at coffee and the Ozzie coffee idea is sweeping through the US and I think it will sweep through Europe at some stage - maybe even the UK - but, they're quite backward in the palate game.
No one does coffee like Melbourne or a few places in Tassie - no one.
the Italians know how to make it - but, they don't know how to drink it.
The French know how to drink it - but, don't know how to make it.
The English - well - they don't do either.
There's a really really sweet living in - (you HAVE to know how to do it right) - starting up a coffee joint - nice and simple --------- turning it up - then, flicking it off and going off and doing it again somewhere else.
of course you need to make good coffee - really good coffee - but, the place has to work well - has to feel great and be a simple thing - don't get complicated
IMO - much of the world is wide open for that.
The easy part of it is learning the coffee - the real art is in running the place -
friendly, welcoming ----------- learn IMMEDIATELY EVERY customers name - greet them by name when they come back tomorrow - and every time - recognise them when they come in and recognise when they are leaving and say goodbye with a wave
