I was diagnosed with IBS maybe 15 years ago. Struggled with it for roughly 2 years. I ended up doing a food group isolation experiment on myself. For example all carb based food for a week, all fruit smoothies for a week, all meat for a week. I found my symptoms completely disappeared until I did my meat week. After that I subdivided it into meat group seafood, white meat and red meat. Turns out I have some real issues with red meat, also extended to egg yolk. I have no idea why doctors don’t either. Now I just stick to a fish only diet and I’m totally fine.
The only thing that I can thick of that could plausibly have caused it directly is that I first experienced symptoms directly after a bad case of food poisoning. So possibly some sort of gut biome. That is pure speculation though.
Good luck I know it is a really annoying thing to deal with.
