around 6 weeks ago, i decided to learn to make pizza
now i am stuck in a ritual
every Thursday afternoon, after ASX close, i prepare dough (with video Susan), for Friday's bake (refrigerate for 24 hours)
every Friday, after ASX close, i make pizza sauce from fresh tomatoes & prepare toppings
at least my redeeming quality is i don't eat most of it
i generally take most to neighbors & friends
but yesterday, i decided to stay home watching an internet event, so this morning, on a Saturday, for breakfast, i used the pizza dough
is this an evil addiction?
below: quick breakfast pizza
1. place dough in oiled caste iron pan, thin
2. top lightly with pizza sauce (not too much), thin sliced mozza cheese (to avoid washing the grater), lightly fried sliced eggplants & capsicum, add chopped shallots & chilli, whatever
3. cook on high heat on stove top until bottom is nicely browned with a few dark bits
4. place under a griller until cooked
