Inflammation of blood vessels that lead to clotting is well documented with the Astrazenica jab. It is well known that Pfizer can cause myocarditis and pericarditis. Unfortunately the down-side of any vaccine is some will act negatively to it. I am confident that their issues and the overall cases of hospitalisations would be far, far worse if the virus was allowed to run free without an vaccine protection.
Be careful regarding Dr Gundry. His main interest now is selling nutrition books based around avoiding lectins (very contentious). His Circulation journal was not peer reviewed. I'm not saying he is necessarily making false claims but it's wise to temper his views with the views of other professionals.
