@mellan have you also explored low-carb and/or FODMAP type diets for Katelin? Ive dealt with a few special needs kids (my daughter also has a chromosomal disorder), and its amazing how many kids - although not diagnosed as coeliac - have a gluten or inflammation intolerance, which usually results in bloating/gas/intestinal issues. Often reducing carbs (or restricting carbs to those with a low GI) can assist together with all of the other awesome things you have been doing to date.
Either way you are doing amazing !! - I always say Mums are the best doctors for their kids, as they not only have the best interests at heart but also truly understand their kids best !
