Kedgeree fried rice:
In a hot pan fry the following:
One small diced onion.
¼ dozen bay leaves.
¼ dozen splashes xo sauce.
Then add the following and continue to fry until rice is starting to brown:
Four or five cups cold cooked long grain rice.
300 gm lightly smoked flaked fish.
1 to 2 teaspoon curry paste.
And ‘some’ of the following:
150 gm small scrimps.
½ dozen anchovies.
¼ dozen cloves pressed garlic.
10 mm pressed ginger.
1 tablespoon tomato paste.
2 blocks fermented bean curds.
1 or 2 teaspoons scrimp sambal paste.
1 teaspoon miso paste.
½ teaspoon jerk paste.
¼ dozen splashes Worcestershire.
¼ dozen splashes fish sauce.
¼ dozen splashes soy sauce.
