Unfortunately you usually lose a lot more than that but often the off cuts are polished into smaller stones. Also grinding a facet on a large stone is quite risky because there are usually fault lines. If the grinder catches the fault then the stone spits. There are only a few specialist who would be trusted cutting stones like that.
