If properly prepared, carp are good to eat. The meat is pink and mild-flavoured similar to Tilapia. As with all fish, where it is caught, and how it is handled and prepared is a big factor in taste and flavour. Carp are considered a rough fish, which means they have thick scales and skin, and a lot of bones.
