I agree. However China - and the rest of the world - turns off and on supply as per demand.
Manono is a monster. But there are many other mines (worldwide) that can turn on supply more quickly to meet increased demand in the short term. There are current producers in both the US and Australia that can ramp up supply in response to short-term demand.
Long term may be a different story, but the risk of alternative battery chemistries (such as sodium-based) is opaque at best from today's point of view.
