Mmmmm haven't cooked shanks for a while very unusual to be this far into winter & not one pot yet - definatley on the list for this week now.....
>> dust the shanks in flour & quickly seal them in the pot then pull out
>> roughly chopped onion & few cloves of garlic crushed with a knife fried in the pot
>> add a couple of fresh tomatoes chopped or a couple of tins
>> few tablespoons of tomatoe paste if you want it rich
>> cracked salt & pepper
>> plenty of wine red or white again depending how rich
>> couple of bay leaves
>> bring it to the boil then let it simmer it for a few minutes give it a stir
>> lay the shanks in oven dish then pour the sauce over it bang it in the oven for a couplke of hours till the meats almost fallin off the bone
Plenty of creamy mash potatoe, crusty bread and MORE WINE
