    I eat lentils about 3-4 times a week. Love them. Even tho' a naturopath once told me i'd be better eating meat, go figure.

    Love brown rice too, due too heavily hippy influenced childhood.

    $3 bag of lentils is enough protein for 4/5 nites meals.

    soak lentils over nite.

    carrot, celery, onion, saute' down, add soaked lentils.

    garlic, chilli if you like. even ginger

    ground coriander, cummin, paprika .

    can add cinnamon stick, a few gloves, cardomen pods, star anniseed, if you want to spice it up. Bay leaf.

    Chicken or vege stock.

    Simmer slow and gentle, till lentils soft and creamy.

    Can also add the likes of, diced chorizo, ham hock, or the one I'd last weekend, lamb forquarter chops.

    Numerous lentils available, brown, green, french (puy), and red lentils which cook and break down quickly and can be used to thicken soups, curries and stews.

    Also can use in numerous Indian style dahls.

    Lentils are a fantastic food.
