Poach two lobsters or two servings of seafood or one lobster and 1 serving of seafood
Cut the lobster(s) in half down the centre
In a pan fry the following in a knob of butter until softened or starting to starting to brown
1 small diced onion
¼ small diced fennel
add the following and heat through only:
The lobster and seafood
250 ml reduced lobster seafood stock
250 ml cream
75 ml brandy
75 ml white wine
50 gm Anster cheese
1 desert spoon tomato purée
1 desert Dijon mustard
1 desert tarragon
2 dashes smoked Tabasco
