Salted cod fritters:
One:
Soak 400 to 500 gm salt cod in cold water for a day, changing the water three or four times.
Rinse and cut into reasonably small pieces.
In a medium saucepan simmer the salted cod in 400 ml of milk or water for at least ¼ hour
When cool debone and flake the fish.
Blend in the food processor with 1 small onion 2 cloves garlic and 1 teaspoon olive oil.
Two:
Boil 350 to 400 gm of potatoes in fresh water or the liquid from the fish.
Mash.
Alternatively use 1 kg of fresh salt cod.
Three:
In a large bowl mix the following:
Fish.
Mash potatoes.
1 beaten egg.
A few pinches of black pepper.
Four:
Make into 20 tight balls
Flatten slightly if desired
Fry in at least 5 mm oil until brown
