So if they do try to turn change Paris Creek farms and focus on downstream production of cheeses, it would make sense to focus on their triple Brie, produce a nice really sharp cheddar and potentially a camembert. Though with the camembert it's hard to find a good one produced in Aus outside of European imports so it would be more of a risk.

They'd pair well with the quince paste and could certainly be sold together in packs/hampers in Coles/Woolies at Christmas time. Could be advertised on the front of the package as a recommended pairing since the quince paste is already a household name.

Could also make a butter specifically for red meats. A nice compound butter that you could scoop and melt onto a barbecue as you grill.

Concerning their new ice cream range, could they blend the quince fruit into an ice cream? I'd imagine the flavours would go well together, just a matter of cutting through that dairy base.
