Gratin:
1.25 kg starchy potatoes parboiled if desired.
Slice into 3 mm slices.
Arrange in a pan and a little sliced onion.
Add the following:
1.5 cups cream.
0.5 cups white wine.
3 tablespoons smoked butter.
¼ dozen cloves pressed garlic.
A few splashes of soy and Worcester sauce.
Bake at 175 until almost cooked.
Then top with the following:
2 cups gruyere cheese.
1 dozen chopped anchovies.
½ dozen chopped thyme leaves,
Continue to bake for a short while until the cheese is starting to brown.
