Jus with red wine:
In a pan fry the following:
1 chopped shallot.
4 tablespoons butter or beef drippings.
Then add the following:
2 teaspoons ground dried porcini mushrooms.
2 cups beef stock.
¼ cup dry red wine.
1 tablespoon Worcestershire sauce.
1 clove minced garlic.
½ teaspoon Dijon mustard.
2 sprigs fresh thyme or ¼ teaspoon dried thyme leaves.
Strain if desire.
Thicken with corn flour.
Cool slightly with cold water and serve with one egg yolk if desired.
