I know from my experience their jobs mostly make money and have never relied to varitation to get them across the line. (to my knowledge). Without have access to any of their books.

I know for a fact though your correct the supermarkets are crack down hard on variations. It is in their contracts that if a variation will hold up a job the contractor is required to complete it reguardless of if it has been approved or not. Then it is at their descresion if they want to pay it at the end.
