Black pudding meat balls:
Lightly fry the following:
1 finely chopped shallot.
1 tablespoon rolled oats.
2 cloves pressed garlic.
In a bowl mix the following:
100 gm black pudding, crumbled.
50 gm pork mince.
50 gm beef mince.
The shallot and garlic.
1 teaspoon finely chopped fresh tarragon.
1 teaspoon finely chopped fresh parsley.
Salt and egg to bind.
And some of the following:
Anchovy paste.
Rice wine.
Fish sauce.
Soy sauce.
Xo sauce.
Make into balls.
Lightly barbecue on the charcoal webber.
Poach and serve with sauce.
Traditional and original recipe.
