In a medium bowl mix the following:
500 gm pork mince.
250 gm diced mortadella.
½ cup powdered Parmesan.
¼ cup breadcrumbs.
¼ cup whole milk.
1 teaspoon dried oregano.
1 teaspoon lemon zest.
1 egg or salt to bind.
And some of the following to taste:
Anchovies or paste.
Fish sauce.
Scrimp sambal paste.
Soy sauce.
Xo sauce.
Liquid smoke.
Make into golf ball size balls and coat in flour.
Fry in a little oil bake or barbecue.
Serve with sauce.
