They can but as you say it's all about margins. Larger size flake costs more and they'd need to buy more of it to produce 1t of AAM. Then you need to deal with the increase in waste. SYR has an agreement to sell it but using larger size flake would flood this market as well which eventually will be the case as more AAM producers come online.
I'm not sure but they may need to recalibrate the mill for different flake sizes. This is past the limits of my technical knowledge. You'd have to assume it would take longer to mill as well.
