You are absolutely right that those factors do contribute to changes in flavour, but only because they influence the amount of substrates in the milk, which in turn alter the taste. This is where permeates come into play. They are used to standardize the nutritional content of milk as well as making sure that they taste the same all year round. This happens to all milk.
