    satay:

    lightly marinate the following:
    500 gm lamb or beef stir fry.
    1 smallish minced onion.
    ½ dozen cloves pressed garlic.
    1 teaspoon ground coriander.
    ¼ teaspoon cumin powder.
    1 teaspoon salt or soy sauce to taste.
    4 kaffir lime leaves.
    2 tablespoons sake.


    Skew.

    Barbecue on one side on the charcoal barbecue.

    For the satay sauce pulse the following:

    75 gm roasted salted peanuts see the note.
    1 onion.
    1 cup water.
    ⅓ cup sweet soy sauce.
    ½ dozen cloves garlic.
    ½ teaspoon salt.
    1 teaspoon sugar.
    ¼ cup sweet soy sauce.
    Smoked tobacco sauce to taste.
    Rice wine to taste.
