    Noodle wheat is a specific and small number of wheat varieties that can be used to make high end noodles in South Korea and Japan. Usually the protein window is 9.5-11.5% but this year there is only a $10/t discount if you are outside that window.

    Prices are freely available from most of the multinational grain traders. Look for ANW1, ANW2 and ANW3 grades ...
