I use Vista Home Premium at home (upgraded from XP on older hardware) and I found it to be headache to work with existing applications and drivers.
If you can get away with it just stick with XP. Not worth the effort to upgrade, especially true if your existing computer hardware are old.
Vista sidebar simply sucks up all the memory you can get. All those Aero interfaces ("wow") need to be scaled down because some apps "cannot handle it". Also the "least user privilege" will drive a lot of your employees nuts. Let me warn you now.
Of course, if you do order new PCs and it comes with Vista it would be a different matter.
