You can get 2 graphics cards and use a matrox triplehead2go, or you can go with 3 graphics cards (make sure your motherboard has enough slots before you buy the cards), and then run 6 monitors off that.
Best off hitting up MSY in ultimo once you know what you want to buy as they are quite cheap.
