Scallops, prosciutto and puréed cauliflower....delicious ....
Wrap prosciutto around the scallop, whack a toothpick thru it to secure,
cook in butter and oil no more than 2 minutes...Boil the cauliflower as per
normal, drain, into the processor and voila , purée...4 scallops on plate,
circle of purée around them and go for it...
