You just reminded me of an experience when in Paris on a European back packing holiday over Christmas 1979.
Then to be Mrs Dex and I lashed out to go to a more up market French restaurant … mains only, no wine, no entre, no desert … menu in French … snooty waiter … when my dinner arrived I was horrified … there was half an animal head on my plate, the idea being to pick/dig/pry bits of gelatinous meat off that skull … it was so disgusting that I don’t remember what else was on the plate … paid sans tip and left … for all I know they probably patched it up and sold it again to someone else … I inhaled baguette and coffee next morning for breakfast lol.
