Went to Sydney Fish Markets this morning.
There's a large Hiramasa Kingfish banner on the building above the wholesale loading area.
Inside the retail area, the staff at the sashimi and oyster bar are wearing Hiramasa Kingfish aprons.
Went to Claudios to buy a whole kingfish.
Price was $16.99 per kilo. Label was "Local kingfish. Australia".
While it was being filleted, I noticed for the first time another display with label "Hiramasa kingfish. Australia" for $24 per kilo.
Are these different species?
Or is a premium price being charged for the same species from CSS?
Returned home and ate a large serving of the cheap version as breakfast sashimi.
Still feeling fine one hour later.
