It would be a primitive hatchery if it were not all temperature controlled and/or hermetically sealed, although this may not be necessary with such a large fish, and with the amount they have spent on this hatchery, they will have all the latest technology and back-up systems in place to manage temperature fluctuations etc.
(NB There are commercial hatcheries farming Red Sea-Bream which is equivalent to our Snapper i.e. same species, in the Mediterranean are hermetically sealed)
