    Porchetta:

    Make the following into a paste:
    1 dozen anchovies.
    2 sprigs of rosemary leaves.
    3 sprigs thyme leaves.
    1 large bulb of smoked garlic.
    1 tablespoon of fennel seeds.
    1 pinch of chili flakes.
    The zest of 1 lemon.
    2 tablespoons of white wine.
    1 teaspoon flaky sea salt.
    ½ teaspoon cracked black pepper.
    Massage into the 3.5 to 4 kg pork belly.

    Roll and tie.

    Barbecue.
