    Porchetta:

    Brine pork belly in the following:
    3½ cups water.
    1 cup apple or tropical juice.
    ¼ cup kosher salt.
    ¼ cup maple syrup
    2 tablespoons brown sugar.
    1 tablespoon red pepper (crushed).
    1 tablespoon garlic powder.
    1 tablespoon onion powder.


    then season with crushed fennel seeds oregano sage thyme pepper garlic powder basil.

    Roll and secure.

    Barbecue.
