In a pan sear.
Serve.
Then in the same pan make sauce with the following:
100 gm total plums and / or cherries.
1 chopped shallot.
1 large garlic clove pressed garlic.
Then add the following:
1 cup beef or chicken stock.
½ cup rendered beef fat.
½ cup red wine.
A few sprigs fresh thyme.
1 tablespoon liquid honey or maple syrup.
