katsu curry:
In a pan marinate the following of at least 1 hour:
4 veal chicken or pork schnitzel.
250 ml buttermilk.
1 teaspoon curry powder.
¼ dozen cloves pressed garlic.
Then coat in egg and panko or standard breadcrumbs.
In a deep pan fry in 5 mm of oil.
For the sauce fry the following in a medium saucepan the following:
1 smallish diced onion.
1 smallish diced carrot.
¼ dozen cloves pressed garlic.
A few chopped stalks of coriander.
1 teaspoon garam masala.
1 teaspoon curry powder.
½ teaspoon turmeric.
Then simmer for ¼ hour with the following.
3 cups water or chicken stock.
¼ to ½ cup sweet mango chutney.
And some of the following:
2 tablespoons soy sauce.
1 tablespoon fish sauce.
1 tablespoon Worcestershire.
Thicken slightly with corn flour.
