Barbecue jerk chicken:
In an ovenproof pan marinate the following for at least an hour:
1 chicken cut into pieces.
2 chopped shallot.
¾ dozen cloves pressed garlic.
50 mm minced or pressed ginger.
¼ dozen pieces thyme.
½ - 2 jalapeno finely chopped.
1 tablespoon olive oil.
Juice of ½ lime.
3 tablespoon Worcestershire sauce.
3 tablespoon soy sauce.
2 tablespoon brown sugar.
1 dessert spoon all spice.
1 teaspoon five spice.
½ teaspoon cinnamon.
½ teaspoon nutmeg.
In the pan barbecue on the charcoal webber with its lid on.
Turn occasionally if required.
