No am not Wallace,,,even though grommet is smarter,but his cheese choice is lacking,
so as dont know where you are going thought,just in case you wish to scribble em down
for ref,,a list of some fond memories..
As have always made it a mission to try cheese where has had a chance to go,that cost an arm and a leg here.
Here are some cool clime varieties,that can recommend

Bryndza:Sheep milk cheese made in Poland, Slovakia and Ukraine.
Recipes differ slightly across the countries,such as most Euro land as a derivative ver,salty and tangy.
Oscypek: Made exclusively in the Tatra Mountains region of Poland,a rare delight
usually sold by lil ol ladies from a basket,in any village,about this time of year
it will be very fresh,,it is lightly smoked with a hard crust and the most delight cross
twix a Feta,and and Edam.(you may find it in Amsterdam,as its a pop munchi)
Esrom: Danish,Trappist-style pale yellow semi-soft cow's milk cheese with a
pungent aroma and a full, sweet flavor.

Tyrolean grey (Tiroler Graukäse)
A strongly flavored, rennet-free cows-milk cheese
made in Austria. It pongs due "togrey" mould that
usually grows all over it. However its extremely low in fat,
Should be mandatory in the A.C.T during sitting times...
Total anti-bonking solution...
But better than a full night of the stuff.
Sirene: an absolute delight when fresh,,,all over most southern
old easternblock nations,and in the med,anywhere that goats are.
Nutty,crumbly,and with Grapa or Ouzo,or Slivovitz
will leave you with happy an very wierd dreams.
If you go to Canada,get some Oka: yes know its not fresh white
but well worth the effort,goes well with any bubbly.
and last but not least, Höfðingi: if you ever get to Iceland,,,runny soft,sticky,gooie
with a crust on top,,,,but OHhhhhh yumo,,,like a lover that has been
faithful forever.
In fact,,the best dreams happen after an evening of old rennet byproducts.
One thinks artist should eat more cheese,as they once did.
