not true, people having been buying off amazon using bitpay, not to mention coinbase and binance using VISA crypto. if you have a read through node operator threads they are buy gpu and node machines, they are spending thousands at a time if not 10s of thousands. you can just go through reddit node operator and most layer 1 blockchains will come up and read through their threads.
not to mention simplex and nuvei which was at the same payments conference as novatti.
