    Fried rice with grated Cauliflower as the rice replacement ... it works, has a "grainy" texture and even has egg.

    • Florets from half a cauli grated
    • 150g finely diced shallots, capsicum, carrot and mushrooms
    • 1 egg, beaten
    Heat a small splash of oil with 1/2 tsp garam masala, add diced veges and stir for 1-2 mins, add another small splash of oil and add the grated cauli, stir and cook for 1 min, expose the pan within the midst of the  vege "rice" mix and add the beaten egg and stir until scrambled then stir into the mix, add a splash of soy, stir and serve.

    That whole dish is just under 200 cals.

    Tonight Mrs D and I split the vege "rice" and served with lightly floured dhufish fillets.

    Per meal about 300 cals, tasty and filling.
