I'll give you the inside gossip ... at something like $8/small bottle for genuine maple syrup I WILL be using water lol.
To "poach" in enough syrup would probably cost $20!
As a compromise, I plan to score the chicken with deep cuts ... marinate in a mix of maple syrup & fresh chilli ... then poach in a narrow post with much chicken and minimal water.
I may throw caution to the wind and add back in the excess marinade to the water and let it reduce slightly during the poaching 8))
